PALATE

Fresh and vibrant flavours of sweet cherries and raspberries are given complexity by hints of savoury spice.

WINEMAKING

The fruit for this Rose was machine harvested in the cool of morning to help retain the vibrant primary fruit flavours. It was then crushed into the press for 8 hours of skin contact before being pressed to tank and cold settled. 48 hours later the clear juice was racked and inoculated. The ferment temperature was kept cool at around 14-15 °C to help retain the fresh primary fruit aromas while also developing a complex fermentation bouquet and increased palate weight and texture. Post-ferment the wine was racked, fined and stabilised for early bottling to retain primary fruit flavours.

Fragrant aromas of raspberry, cherry and plum with subtle spice and floral notes.

FOOD PAIRING

Perfect with Spicy Pad Thai or Peri Peri Chicken Wings.

VINTAGE NOTES

The 2017 growing season had higher than average rain events late in the winter, followed by another one in early spring that increased soil moisture. October conditions were unseasonably warm, and combined with the increased soil moisture caused slightly higher than normal vine growth. The growing period was longer and milder which favoured the earlier ripening varieties - overall a challenging, cooler vintage resulting in leaner, elegant more complex, austere styles.
