PALATE

A focused palate, with white stone fruits and lemon blossom, followed by cashew and a flinty undertone. Great length with hints of toasty oak and is balanced by a fresh natural acidity.

WINEMAKING

The 2017 Chardonnay fruit had a variety of winemaking techniques used to create this wine. A larger proportion of machine harvested fruit was gently pressed with two thirds of clean juice fermented in stainless steel and one third fermented in a mix of new and old oak barrels. Post fermentation the lees were stirred gently once a week until the balance between oak, lees and fruit characters were achieved. Malolactic fermentation was not encouraged so the vibrant natural acidity was preserved. The wine was then blended, fined and bottled.

COLOUR

Brilliant medium straw.

NOSE

Lifted aromas of nectarine and citrus with subtle cashew and a hint of toasty oak.

FOOD PAIRING

Roasted chicken with lemon and thyme or pan fried ocean fish.

VINTAGE NOTES

The 2017 growing season had higher than average rain events late in the winter, followed by another one in early spring that increased soil moisture. October conditions were unseasonably warm, and combined with the increased soil moisture caused slightly higher than normal vine growth. The growing period was longer and milder which favoured the earlier ripening varieties - overall a challenging, cooler vintage resulting in leaner, elegant more complex, austere styles.
