PALATE

Lifted cherry and blueberry with hints of dark chocolate, clove and savoury spice. A smooth and supple palate exuding juicy plum, red currant and boysenberry fruits with beautifully soft and velvety tannins.

WINEMAKING

Fruit was destemmed, chilled and transferred to closed fermenters for cold soaking with daily pumpover. After 5 days the must was allowed to warm and fermented over a ten day period with pumpovers twice daily. Some parcels were pressed early to retain vibrant fruit characters with other components being allowed a small degree of extended maceration on skins before pressing, allowing tannins to soften. The wine was matured with French oak contact, once correct balance was achieved the wine was blended, fined (egg) and bottled.

COLOUR

Medium red with a purple hue.

NOSE

Aromas of dark cherry, blueberry, hints of dark chocolate, and juicy plum savoury spicy oak.

FOOD PAIRING

Perfect with slow cooked lamb shanks and creamy mash potatoes.

VINTAGE NOTES

The 2016 Vintage had dryer than average conditions with mild days and cool nights, this resulted in a perfect slow ripening pattern for both red and white grape varieties with fantastic natural acid retention, concentrated colour, intense flavours and aromas while achieving perfect tannin ripeness.
