PALATE

Rich flavours of dark berries and satsuma plums are balanced by underlying earthiness and sweet spice.

WINEMAKING

The 2017 Merlot fruit was handpicked in pristine condition. The fruit was chilled and whole bunch pressed to allow gentle pressing. The juice was transferred directly into French oak barrels and temperature controlled to ensure
a slow fermentation process with natural (wild) yeasts.

COLOUR

Deep crimson with a plum hue.

NOSE

Aromas of dark berries with an earthy undertone.

FOOD PAIRING

Pairs beautifully with lamb ragu pappardelle pasta.

VINTAGE NOTES

The 2016 Vintage had dryer than average conditions with mild days and cool nights, this resulted in a perfect slow ripening pattern for both red and white grape varieties with fantastic natural acid retention, concentrated colour, intense flavours and aromas while achieving perfect tannin ripeness.
